Red wine ferments together with the grape skins, which adds colour and tannin. White wine is usually made without the skins, so it stays lighter and crisper. Sparkling wine gets a second fermentation that traps gas and creates its bubbles.
Sweetness comes from the natural grape sugar left after fermentation. If the yeast turns nearly all of it into alcohol, the wine tastes dry. When some sugar remains, the wine tastes off dry or sweet.
The selection is personal rather than complete. The focus is on calm, balanced wines with their own quiet character — a small, curated choice instead of a long list, always picked the way I would recommend them to a friend.
